A American Brick style 1870's family recipe, akin to a mild cheddar quite approachable and slightly saline. Semi-hard, firm with a very familiar texture.
Pairs very well with beer. Melts well & is popular on a cheese platter.

Cheese arrives vacuum packed with a "best by" date. Cheese should last a month beyond this date if tightly re-wrapped in plastic wrap or cheese paper, weekly. All pieces are approximately 8 oz. or 1/2 pound.
